Salmon Pasta with Fresh Cranberry Butter

If you're like me, you bought a bag of fresh cranberries during the holiday season and now have absolutely no idea what to do with the leftovers you have sitting in your fridge or freezer. Sweat no more, I'm here to help. 

I used a nearly full bag (2 cups) to create one of my new favorite things in our refrigerator: homemade cranberry butter. It's sweet, yet tart, and tastes fabulous on just about anything. Cranberry butter is super simple and comes together easily by making a fast cranberry lemon sauce, letting it cool completely, and mixing it with softened butter. You'll love this spread on breads, rolls, sandwiches, and salmon. Wait what?

Yep, it's true. I used it on top of baked salmon and y'all....it was so delicious. 

There are those meals where you take a recipe step-by-step from Pinterest and make it. There are those meals where you take a recipe and change a few things to make it your own. Then there are those recipes that you create on a whim entirely on your own. Those are the meals I'm most proud of and typically are some of my favorite. 

This was one of those meals; created entirely by me with a bunch of random ingredients I picked up from the grocery store. 

It only takes a few minutes prep and a little patience while the oven does all the work. Pile the shredded salmon with cranberry butter on top of some broccoli pasta and you've got a delicious (and pretty!) dinner for two.
