sausage, sweet potato, + kale bake

As I'm writing this blog, I can only think of one word: YUM. 

Tonights dinner was one of my favorites. I had only fixed this dish one other time so it wasn't quick and it definitely wasn't something I had prepared in advance. 

If you are looking for a quick "throw it all in the crockpot, come home 5 hours later, and only clean one bowl" recipe, go ahead and leave now. This IS NOT that kind of dinner. 

It's not difficult, but it is a process. 

We eat sausage at least once a week at our house. I usually fix the same simple sausage pasta  (seriously, ask my boyfriend) but this is a new recipe that might start taking it's place. It's hearty but it's also fresh. Oh and it's covered in a cheese sauce, that's good too.

Here's what you will need:
2 teaspoons olive oil
1 large sweet potato 
1 large sausage link
2 cups kale
2 cups chicken broth
3/4 cup milk
1/4 cup flour
3/4 cup Gruyere cheese


 Step 1: In a large skillet, combine diced sweet potatoes and sausage slices over high heat. Once browned, turn to low temp and add 2 cups of kale. Cover and let cook on low. 



Step 2: In a separate pan, mix 1/2 cup milk and 2 cups chicken broth and bring to a low boil. 


Step 3: In a bowl, mix 1/4 cup milk and 1/4 cup flour and whisk until it forms a paste. Add paste mixture and 3/4 cup shredded Gruyere cheese. Pour over sausage, potatoes, and kale.



Step 4: Serve with a sprinkle of cheese on top and enjoy!


There you have it, it's THAT simple to make this yummy dish. It's a favorite in my home, and I hope it will become a favorite in your's. 

Tip: ONLY buy Gruyere cheese for this dish. It's a little more difficult to find and it's probably more expensive than all the other cheeses at your local grocery store, but it's so worth it. The cheese MAKES this dish.
