Homemade Potato Soup


Yesterday Austin got bombarded with thunder, lighting, strong winds, and lots of rain. With that being said, it was the perfect day for a bowl of homemade soup. I wish I could tell y'all that I just woke up an thought "what a perfect day for soup!", but I didn't. Truthfully, I had potato soup on my recipe calendar for like a week. So, shoutout to the universe for the rainy weather "soup-day"!

I am such a sucker for anything that gives off the cozy "lay in bed all day" vibes and for me, soup does just that. I like all soup: chicken noodle, tortilla, even a good bowl of chili ; but my favorite? POTATO. Growing up my family would make trips to Shoney's just for a bowl of their potato soup. I guess that's how it started. 

I've said it a million times, but when I first moved to Texas with Eddie K, I didn't have the slightest clue how to cook. Since then, I've become a new-and-improved person. I fix dinner almost every night of the week and I've learned that cooking doesn't mean opening a package. I've really learned to appreciate new cooking techniques and I'm ALWAYS open to trying new things in the kitchen. 

This recipe can look a tad bit overwhelming at first but trust me when I say it's not nearly as bad/hard as it looks. It takes about 10 minutes of prep time and only about 30 to actually cook. 

Tip: To make this recipe easier you can make this recipe earlier in the day and leave cooking on low all afternoon! This allows you to have dinner on the table exactly when you want it!
