A Wheatsville Dinner for One


It's DAY 4 of me being in Austin on my own while my boyfriend is in the U.K. for work. Normally when he travels it's only for about 3 or 4 days at a time. With this trip taking him overseas, our time apart is a bit longer. 

If you know me, you know that I'd eat corndogs or chicken nuggets every single day. Well, whenever I'm in Austin alone, I tend to eat a little differently than I would if Eddie were here. For the last four days I've eaten pizza bites 5 times. Let me break it down for you a little better, I've only eaten pizza bites. Nothing else. 

With that being said, I decided it might be a good idea to actually sit down and have a decent meal today. After running into Target to get some dog treats for Loretta, I decided to walk next door to Wheatsville. Since moving to Austin last year, I'd only been in the store once and I wasn't all that impressed. This time, however, I was. 

Wheatsville has their own soup, salad, and dinner station inside the grocery store. For $8.99 per lb you can create your own salad box using fresh and organic produce. 

Here what I got: fresh salad mix + mushrooms + chickpea salad + sprouts + carrots. I also branched out and decided to try one of their dressings made in house. I settled on the white wine vinaigrette and I can honestly say, it's my new favorite dressing EVER. It was the perfect compliment to my salad. 

So if you are looking for a quick and healthy lunch/dinner option, Wheatsville has my vote.
