If I've said it once, I've said it 1,000 times: when it comes to food, I prefer the simple things in life. Give me all the pizza, chicken nuggets, and corndogs pleaseeeeeee.
BUT....I'm working on it. I'm branching out and trying my best to find new foods that I want to eat on a regular basis. Right now, that food is quinoa.
Before moving to Austin with Eddie K, I would've NEVER tried quinoa. Mostly because I'd never heard of such a thing. But after learning to cook it myself and not being afraid to order it out, I can honestly say I enjoy eating it. It's healthy and light but also very filling. If cooking it myself, I usually combine it with fresh garlic and mushrooms to create a side dish. Simply place all three in a skillet with a splash of water and let cook on low for about 15 minutes. SUPER YUMMY!
If I'm ordering quinoa at a restaurant, I usually lean towards cold salads. I love a fresh and refrigerated snack from time-to-time. Today, I wanted a salad. I mean technically I wanted pizza but with our Belize trip right around the corner, I decided to try something a little better for my waistline.
"Peoples RX" is a pharmacy right down the street from our apartment on South Lamar. It's convenient and super yummy. Aka a win-win! I bought a pre-packed (BUT FRESHLY MADE!) "Kale & Quinoa Salad." It contains kale, quinoa, red grapes, sunflower seeds, and red pepper. Y'all, I can't even explain in words how fresh this salad was. The kale was crispy as were the red peppers. My favorite part? The sunflower seeds mixed with the quinoa. HOLY MOLY. SO GOOD.
The dressing comes in a small container so you can decide if you want to add a little, or a lot. It's a blend of olive oil, lemon juice, parsley, garlic, sea salt, and pepper. It's a little salty so I chose to only add about half the cup of dressing. Overall, it's a nice addition to the salad.
Let's talk coffee....iced coffee.
Texas is hot again! It was almost 80 degrees today! That calls for iced coffee if you ask me! I ordered an "Iced Cashew Latte" to go with my salad. This coffee drink is fixed using house-made cashew milk in either chocolate or spice flavor. I went with the chocolate because in my head, I thought the salad balanced it out. Ha! Needless to say, it was DELICIOUS. The cashews made the texture a bit different. It was little more thick than a normal coffee but I actually didn't hate it.
My suggestion though? Order a small. It tastes better before it "waters down."
