It's Not Spaghetti, It's Squash

I've been working hard to expand my book of go-to recipes lately because I must admit, I've made chicken tacos a few too many times and I think Eddie K is over it. 

We've passed the spaghetti squash at Whole Foods at least a dozen times but as someone who had never cooked it before, I didn't want to pick one up until I discovered a yummy way to incorporate it into a recipe. 

Fast forward to my latest grocery run where I decided to stock the fridge and pantry with yummy (and different) items for us to cook with and/or snack on. One of the items on my list was, in fact, spaghetti squash. 

I made a few changes to the original recipe I found and am completely satisfied with the outcome.
